Ingredients
Dough (for 2 quiches)
- 2 cups flour
- ½ tsp salt
- ⅔ cup cold butter
- ½ cup ice cold water
Egg mixture (for 2 quiches)
- 6 eggs
- 2 ½ cups whole milk 3% milk
- ¼ tsp cayenne pepper or to taste
- dash nutmeg
- ¼ tsp salt or to taste
- ¼ tsp ground pepper or to taste
Bacon Mushroom Gruyere filling (1 quiche)
- 1 TBS butter
- 5 slices Bacon
- 1 small onion diced
- 1 cup sliced mushrooms
- 1 cup Gruyere Cheese grated
- ¼ cup Parmesan cheese grated
Tomato Spinach Asiago filling (1 quiche)
- 1 TBS butter
- 1 small onion diced
- 1 cup Cherry tomatoes halved
- 2 cups baby spinach roughly chopped
- 1 cup Asiago Cheese grated
- ¼ cup Parmesan cheese grated
Instructions
Directions for dough
- Sift together flour and salt
- Rub in butter until about pea size or use a food processor
- Make a well, add water lift and drop with fingers do not over work just until it forms a ball
- Cover with plastic wrap place in the fridge for a minimum of 3 minutes up to 2 days
- Pre-heat oven to 350°F
- Cut dough in half careful not to overwork the dough
- With a floured rolling pin roll out dough to 1/8" thick and line pie plates
- Crimp or fold edges
- Blind bake (line the dough with parchment paper and fill with dry beans) the crust for 25-30 minutes in a 350F oven
Meanwhile prepare filling
- grate cheeses, mix Asiago with ¼ cup of Parmesan, mix Gruyere with ¼ cup Parmesan and set aside
Bacon Filling
- In a frying pan chop bacon and cook until crispy, put aside and remove most of the bacon fat from the pan
- In the same frying pan add 1 TBS butter and sauté onion until translucent – set aside
- In the same pan add the mushrooms
- Once tender add the cooked onions and cooked bacon crumble to the pan
- Season to taste and set aside
Tomato Filling
- In a frying pan add 1 TBS butter and sauté onion until translucent
- add tomatoes to the pan and sauté until tender
- Add spinach and toss for 1 minute
- Season to taste and set aside
Egg Mixture directions
- Beat eggs in a stainless steel bowl and add seasoning
- Scald milk in a sauce pot (warm milk before it starts boiling) and pour slowly into egg mixture Slowly whisking constantly
Assemble Quiches
- in each pie crust sprinkle half of the cheese mixture
- spread mixtures in each pie
- pour egg mixture until it comes to the top of the crust
- top with remaining cheese
- bake for 30 minutes or until set
- Serve warm or at room temperature
