Sometimes you feel like nuts and sometimes you feel like chocolate. Choose which way you want your banana bread. Both are delicious I don’t have a favourite. I often double the recipe and make one of each.
Banana Bread – Walnut or Chocolate Chip
This moist banana bread is comforting and satisfying.
Servings: 1 loaf
Ingredients
- ½ cup Vegetable oil Olive oil or melted butter is an acceptable substitutes
- 4 ripe bananas mashed
- ½ cup plain greek yogurt plain yogurt or sour cream acceptable substitutes
- 2 eggs
- 1 ½ tsp vanilla extract
- 2 cups flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup sugar
For Walnut Banana Bread
- 1 cup walnuts chopped
- 1 tsp Cinnamon
- ½ tsp nutmeg
For Chocolate Chip Banana Bread
- 1 cup Chocolate Chips
Instructions
- Pre-heat oven to 350°F
- use a fork to mash bananas
- Add yogurt, eggs(slightly beaten) and vanilla and mix
- **if doing Walnut Bread** In a pan at medium heat toss the chopped walnuts for about 6 minutes do not overcook
- Sift dry ingredients into mixing bowl
- Add oil to dry ingredients and mix until mostly combined
- Add banana mixture slowly scraping sides halfway through
For Walnut Banana Bread
- Add cinnamon and nutmeg
- Fold in most of the nuts with a spatula leaving some out for the top
- Place in a greased loaf pan and top with remaining nuts
For Chocolate Chip Banana Bread
- Fold in Chocolate Chips
- Place in a greased loaf pan
For both kinds of breads
- Bake until toothpick comes out clear about 60 minutes
